I like this woman's site. These overnight oats are the best I've had so far. I made the chocolate peanut butter overnight oats. I used sunflower seed butter instead; I hate peanut butter. I loved it with the chia seeds and used honey instead of maple syrup. I used my favorite homemade sugar-free chocolate recipe for the topping that I let sit in the freezer chopped up. I also used regular milk. I had extra energy this morning after eating this.

Lori's Homemade Herbed Butter

For one sandwich: Leave out one pat of organic butter on the counter until it softens 1-2 hours. Mix into a1/2 tsp with dried parsley, dried oregano, and dried thyme equally, or 1 1/2 tsps of the fresh herbs. Mix the butter with the herbs. I used one large slice of homemade french bread. You may need to double your recipe. I had the width in bread to only need one slice. Butter the bread on the outside. Slice cheddar cheese to fit the bread, about 1/4 inch thick. Slice sweet cherry tomatoes and lay them on the cheese. Close the bread and toast in an electric skillet on medium high for ten minutes on each side. Cut in half and enjoy!

I used the crockpot for this and I added sauce to it. I also added a bit of garlic powder. The pesto gives these a kick for sure. Brown them before. Using pesto with Thai Basil in it is strong, so I only used 1/4 c. for 1 lb. of ground turkey. I could taste the fragrant herb, but I think I could have even got away with more of it in there. This is a good recipe to play around with. I will be using some of the leftover meatballs for pizza.

Salad with Lemon Basil Red Wine Vinegar Dressing


I made this and was so pleased it had zest in it since I freeze some when I get lemons. It worked out good; it was still fluffy. I added a bit of honey which it probably didn't need but when I tasted it without the lettuce to taste test it tasted too bitter for me. Next time I will leave out the honey and see how it is. I used Thai Basil from my Aero Garden, which is more pungent than Genovese Basil, so this could be a factor as well-it's powerful though and I can already feel it hitting my body in a positive way today after eating the salad. As is though how I made it, the juices of the dressing soaked into my tofu cubes. And I love the small baby tomatoes that are such a luxury to me to be able to get them delivered with all the shortages on deliveries still.

I made some delicious Greek yogurt from the last batch of yogurt I made. It's such a milder flavor than the store bought. For this reason it makes a much better dip I feel. I'll be baking some potato wedges today with smoked paprika on them and this will go great as a dip with them. This is also great on buffalo chicken wings.

Instant Pot Yogurt

This is the best no-nonsense approach to Instant Pot yogurt. I only had to wait 15 minutes for the milk to drop to the appropriate temperature after removing it from the instant pot to cool. I left it in the fridge overnight right in the instant pot and it came out pretty thick for 2% milk. I don't think I'll go lower than that, but who knows. I like 1% milk. Then I just drained some over night for the Greek yogurt to make the dip with. I will be careful how much liquid forms once you touch it with a spoon in the morning-possibly because I use such a lower fat milk than most do. I'm thinking of trying a turkey baster to suck some of it out without disturbing the yogurt. It appears if you stir it too much it will get thinner. I will continue on working on methods to keep it thick by working on the handling and the liquid leftover in the yogurt. Draining it is an easy solution but it's less yogurt and I don't always want just Greek yogurt. Tastes great though. The healing benefit to my digestive system is great!

This is really delicious. I made homemade cream of chicken soup because I hate all the additives to the canned stuff and if organic it's pricey. I also used some french bread I made for the bread crumbs. These two homemade ingredients made a big difference.

Spinach Lasagna Roll Ups


I've always wanted to make pasta roll ups, never had the courage. I think these came out good but definitely what made them was the fresh basil from my aero garden that my son got me for Christmas. I can't say enough about it. I chopped up a few leaves and added it to the ricotta mixture. The wonderful feeling after of eating fresh herbs, especially when all you're usually feeling is pain, is immeasurable. How it is making lemonade.

The ricotta was easy where I used the instant pot to monitor the temperature of the milk and it worked like a dream. Then you just add the acid and salt and let it sit. Walla, ricotta cheese.

I used vinegar which is better I think. It tasted just like from the store but better. I use low fat milk so you don't get as much but it still works very well for me (about 4 c. of milk for 1 c. of organic low fat ricotta). It's almost $9 at Amazon Fresh now or something comparable $3.49 non organic at Fred Meyer and delivery and tip fees.

Lemon Pound Cake Muffins - Hit the spot.

Taste of Home knocked it out of the park with these pound cake muffins that I would never ordinarily be able to eat. They're even good with coconut sugar-which I use all the time because I don't use refined sugar (white sugar specifically, the brown sugar is easily covered by coconut sugar). I topped them off with lemon glazed frosting from Detoxinista. Fab. I put just a very, very, small smidgen (2 or 3 drops) of lemon extract and let it sit in the fridge for about 30 minutes or so and it left a perfect tang with my coconut sugar for these muffins.

My triglycerides were a bit high last year and I was told to cut down on simple carbs. I only eat non simplified carbs in between meals. This is a good cheat for that as well as no refined sugar. Nice one Detoxinista!

I started out with the regular yogurt from his machine. I loved the creaminess. It is better this way. My stomach took it down nice and felt better digested when I woke up. I will be doing this once a week to keep homemade yogurt in my system since gut health is so important, especially with an autoimmune disease. 




The strained yogurt that I turned into Greek yogurt is perfect for recipes and where I used low-fat organic yogurt as a starter and organic 1% milk, not only is it better for me but the price of Greek yogurt for a small amount for a recipe wasn't good for me to worry about throwing it out - I don't always want it in smoothies. I saved 3 starters of 3 tablespoons of regular homemade yogurt in the freezer and marked the date to try and use them up before 3 or 4 weeks before it loses the strain possibly as I read, giving me only having to buy one quart of yogurt a month to get 4 and more quarts of yogurt and in ways for recipes.

 I had been checking out adobo seasoning online to buy for a while. It either didn't have the price I was looking for or the ingredients. This turned out just fine. The taste on the air fryer chicken leg stood out. I used the chicken preset button, brushed two legs with olive oil, then sprinkled 1/2 tsp of the seasoning that I had stored in a ziploc bag label adobo seasoning on both legs. I turned them both on one another and what fell in the bowl and they were covered enough. I turned the legs halfway through with tongs. I always brush olive oil on the bottom of my air fryer basket when I cook. This didn't need to done when turning.

I put most of this into an instant pot browning the chicken, then onion and garlic and cooked on high for 10 min. with a natural release. I browned some tofu with the chicken as well.
