Most of the eggplant is made with an air fryer once I figured out it tasted better. I mixed some flour with basil and oregano and made an egg wash dipping the flour twice doing it after the egg wash too. Then I lightly brush olive oil on the eggplant and air fryer basket and fried at 400 degrees for a few minutes on each side until it browned. Then I took half and layer it in the baking dish and put some good jarred sauce, a bit, over that layer, and then put the next layer and more sauce and I topped it with cheddar cheese because that's all I had in the house. Be sure to salt and pepper your eggplant before air frying as well. You can do this after it's all coated and after lightly brushing with oil. I baked it at 350 degrees for 20 min. My oven works fast. Yum!!!
